Seared Scallops with Pasta

Wine Pairing:
Hocking Hills Winery Cardinal Red
Ingredients:
- 1/2 lbs. scallops
- 1 bag of spinach
- 5-6 pieces of asparagus (ends cut off)
- 1-2 tbsp. minced garlic
- 1 lemon (juiced and zested)
- 1 cup of cream (sub almond milk)
- 2-3 tbsp. Extra Virgin Olive Oil
- salt and pepper to taste
Directions:
- Prep your scallops by laying them out on a paper towel and let dry for about 10-15 mins
- While the scallops are drying off in the fridge, get your pasta water salted and ready to boil.
- Prepping your purée reuires a blender. Add your fresh spinach, asparagus, minced garlic, cream (or almond milk), lemon juice/zest, and salt/pepper.
- Blend until smooth and add salt and pepper to taste.
- Boil pasta according to the directions. Once pasta is al dente add a tablespoon of extra virgin olive oil and mix well.
- Add your spinach and asparagus purée to the pasta.
- Now it’s time to sear your scallops!
- After you pat your scallops dry add salt and pepper to each side.
- Add two tablespoons of extra virgin olive oil to your pan and turn it on medium high heat. WAIT until your pan is HOT.
- Once it’s hot, add your scallops. You will wait 3-4 minutes without touching them to get the perfect sear.
- Flip, then cook for another 1-2 until the sides are opaque while adding one more squeeze of lemon juice.
- Take off the heat, and prepare your pasta on a serving plate.
- Finally add your seared scallops, pour a glass of wine, and enjoy!
