Seared Scallops with Pasta

Few things are as satisfying as a perfectly cooked meal paired with a delicious glass of wine. At Hocking Hills Winery, we're always on the lookout for great food and wine pairings that showcase our wines in the best possible light. That's why we're excited to share this recipe, a dish that combines succulent scallops with flavorful pasta and a rich sauce for a decadent meal that's perfect for any occasion. To top it all off, we'll also suggest a Hocking Hills Winery wine that pairs perfectly with this dish, elevating the dining experience to new heights. So, grab your apron and let's get cooking!

Wine Pairing:

Hocking Hills Winery Cardinal Red


Ingredients: 

  • 1/2 lbs. scallops
  • 1 bag of spinach
  • 5-6 pieces of asparagus (ends cut off)
  • 1-2 tbsp. minced garlic
  • 1 lemon (juiced and zested)
  • 1 cup of cream (sub almond milk)
  • 2-3 tbsp. Extra Virgin Olive Oil
  • salt and pepper to taste


Directions:

  • Prep your scallops by laying them out on a paper towel and let dry for about 10-15 mins
  • While the scallops are drying off in the fridge, get your pasta water salted and ready to boil.
  • Prepping your purée reuires a blender. Add your fresh spinach, asparagus, minced garlic, cream (or almond milk), lemon juice/zest, and salt/pepper.
  • Blend until smooth and add salt and pepper to taste.
  • Boil pasta according to the directions. Once pasta is al dente add a tablespoon of extra virgin olive oil and mix well.
  • Add your spinach and asparagus purée to the pasta.
  • Now it’s time to sear your scallops!
  • After you pat your scallops dry add salt and pepper to each side.
  • Add two tablespoons of extra virgin olive oil to your pan and turn it on medium high heat. WAIT until your pan is HOT.
  • Once it’s hot, add your scallops. You will wait 3-4 minutes without touching them to get the perfect sear.
  • Flip, then cook for another 1-2 until the sides are opaque while adding one more squeeze of lemon juice.
  • Take off the heat, and prepare your pasta on a serving plate. 
  • Finally add your seared scallops, pour a glass of wine, and enjoy!
